GOAL

Determine the most cost effective approach to expanding the capacity of the commissary by 30%, to 28,000 meals per week

CHALLENGES

  • Maintain ongoing operation during construction
  • Limited budget

SOLUTION/STRATEGY

  • Construction in two phases
  • Leave existing production and storage areas in tact
  • Reuse all existing equipment
  • With little change to systems of operation, Owner built on existing work habits and procedures so minimal retraining of employees was required

RESULTS

Expanded the facility to support increased demand without any downtime during construction.
