Grand Hyatt Market Place
Create a new Grab & Go venue at the lobby level as a complement to and replacement for guest reliance on conventional room service. The venue will be available 24/7, serving hot and cold food and beverages.
The venue had no linkage to the main kitchen back of house. It had to be designed as a stand – alone facility with back-up storage and housekeeping support with material handling accommodation to avoid visual/ physical conflict with guest circulation patterns.
The design would be curated to support specialized menu requirements to achieve a high level of organization and visual impact. The objective was to eliminate visual clutter so often seen in similar venues.
Provide accommodation of refrigeration in the guest rooms for storage of cold food and beverages purchased in the Grab & Go and held for later consumption.
The Grab & Go venue had a favorable impact on labor cost and contributed to increased levels of guest satisfaction. The model served as a prototype for implementation at other Hyatt hotel properties.
