LeeSar Commissary
GOAL
Design a new central commissary to support the Lee Memorial Health System (1600 beds) with the potential of producing 40,000 meals per day. The commissary will support four acute care hospitals, a rehab hospital, a children’s hospital and a long term care facility..
SOLUTION/STRATEGY
The commissary will rely on advanced meal production and include the following key functional areas:
- Cook chill production with high volume ketlles, cook tank and ice builder.
- High volume packaging line for grab & go items.
- Full bakery.
- Test kitchen
- Staff café.
Design a state of the art facility to meet USDA standards, withstand a category 5 hurricane and support all member hospitals for 14 days with no resupply.
RESULTS
The cost of building a new commissary was less than the estimates of cost to renovate and expand existing kitchens in the member hospitals, had the space to expand had been available. Member hospitals gain economies and improved consistency resulting from centralization.
